The venture of Sergio’s son, David Carlei. Having worked together for some years, David too focused on organics and biodynamics to produce wines from across Victoria.
A hands-off approach, with extended maceration periods, lees contact and minimal fining, has created wines that are real and natural. Fruit was sourced from the Yarra Valley and Heathcote.
The white wines were macerated on skins for up to 90 days, with prolonged lees contact. The reds underwent whole cluster fermentation, prolonged maceration, extended lees contact and wild yeasts.
Wines with a more natural intrinsic quality that express the holistic approach to winemaking.
region: YARRA VALLEY
The Yarra Valley has a cool climate suited to producing Pinot Noir, Syrah, Chardonnay, and traditional method sparkling, although many other varietals are grown successfully within the area.
The climate here allows for retention of natural acidity, while the extended growing period allows for ripe fruit flavours to develop. Syrah from here is typically more floral, blue fruited with a touch of spice and earthy game.
Pinot again falls into the lighter spectrum, with bright red fruit, vibrant acidity and good cellaring potential.
region: HEATHCOTE
A temperate climate renowned for producing full bodied Shiraz, alongside many other varietals.
The ancient soils have great water holding capacity, which allows the vines to flourish during the growing period. Shiraz/Syrah from here is typically higher alcohol than other regions, with ripe black fruit, red fruit and spice, as well as having very good ageing potential.
