CONVENTIONAL WINEMAKING

It involves the application of Agri-chemicals for the vineyard or winemaking process that are government approved.

 

They can be natural or synthetic which usually involves the elimination of certain organisms using a toxic approach which by the authorities is regarded as “safe”.  

ORGANIC WINEMAKING

It involves the application of natural ingredients for the vineyard or winemaking process that are government approved. They are only allowed to be natural and forbid the use of synthetically made chemicals. Organic winegrowing is the practice of using natural solutions in the vineyards to promote healthier vine growth and utilise natural winemaking techniques using natural yeast and minimal using of natural fining agents.

 

To get Organic Certification, such natural ingredient used need to be certified by a government approved Organic Certifying Organisation. Organics also encompasses a focus on biodiversity in the vineyards, the use of composts, cover crops, and natural treatments such a sulphur and copper. This results in generally lower yields of higher quality grapes.

bIODYNAMIC WINEGROWING

A specialised for of organic farming, Biodynamics can be simply defined as biology (Bio) in motion (Dynamic).

 

What makes it different from Organic winegrowing it that it encompasses an understanding of the cyclic rhythms in nature that affect vine plant growth. This allows the opportunity to optimise maximum desirable flavours in grapes, one of the most important attributes in growing great wine. It begins with the soil and finishes in bottle. 

 

Viticulturally, natural constituents that are friendly to nature including homeopathic preparations are used to improve and enhance soil quality. Then there are the seasonal physical vineyard activities including when to prune, spray and harvest and continues in the winery when process, rack and bottle are all equally important. This wholistic approach is paramount in making unique wines which clearly reflect their unique “sense of place” or origin.
